- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Jalapeño - 1, minced
- Canned diced tomatoes - 400 grams
- Kidney beans - 200 grams, drained and rinsed
- Chili powder - 1 tablespoon
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Beef broth - 250 milliliters
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced red bell pepper, and minced jalapeño. Cook for another 3-4 minutes until the vegetables are softened.
- Stir in the diced smoked brisket and cook for another 5 minutes, allowing the brisket to warm through.
- Add the canned diced tomatoes, kidney beans, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir well to combine.
- Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low and let the chili cook uncovered for about 30 minutes, stirring occasionally.
- Taste and adjust seasoning as needed. If the chili is too thick, add a bit more beef broth.
