Ingredients

  • 2 medium beets (about 200g each)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 whole wheat slider buns
  • 1/4 cup BBQ sauce
  • 1/4 cup coleslaw mix
  • 2 tablespoons vegan mayo
  • 1 tablespoon apple cider vinegar
  • Fresh cilantro for garnish

Steps

  1. Preheat your smoker or grill to 120°C (250°F).
  2. Wash and peel the beets, then cut them into 1-inch thick slices.
  3. In a mixing bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper. Toss the beet slices in the mixture until evenly coated.
  4. Place the beets in the smoker or on the grill, and smoke for about 45 minutes, or until the beets are tender and infused with smoke flavor.
  5. While the beets are smoking, prepare the coleslaw by mixing coleslaw mix, vegan mayo, apple cider vinegar, and a pinch of salt in a bowl. Set aside.
  6. Once the beets are done, remove them from the smoker/grill and let them cool slightly.
  7. Toast the slider buns on the grill for about 2-3 minutes until golden brown.
  8. Assemble the sliders by placing a smoked beet slice on each bun, topping it with BBQ sauce, coleslaw, and garnish with fresh cilantro.
