- 2 medium beets (about 200g each)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 whole wheat slider buns
- 1/4 cup BBQ sauce
- 1/4 cup coleslaw mix
- 2 tablespoons vegan mayo
- 1 tablespoon apple cider vinegar
- Fresh cilantro for garnish
Steps
- Preheat your smoker or grill to 120°C (250°F).
- Wash and peel the beets, then cut them into 1-inch thick slices.
- In a mixing bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper. Toss the beet slices in the mixture until evenly coated.
- Place the beets in the smoker or on the grill, and smoke for about 45 minutes, or until the beets are tender and infused with smoke flavor.
- While the beets are smoking, prepare the coleslaw by mixing coleslaw mix, vegan mayo, apple cider vinegar, and a pinch of salt in a bowl. Set aside.
- Once the beets are done, remove them from the smoker/grill and let them cool slightly.
- Toast the slider buns on the grill for about 2-3 minutes until golden brown.
- Assemble the sliders by placing a smoked beet slice on each bun, topping it with BBQ sauce, coleslaw, and garnish with fresh cilantro.
