- Beets - 2 medium-sized, roasted and peeled
- Quinoa - 1/2 cup, cooked
- Black beans - 1/2 cup, drained and rinsed
- Oats - 1/4 cup, ground
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- BBQ sauce - 1/4 cup (store-bought or homemade)
- Whole grain burger buns - 2
- Lettuce - 2 leaves, for serving
- Tomato - 1 medium, sliced
- Red onion - 1/4, thinly sliced
Steps
- Preheat your grill or stovetop grill pan over medium heat.
- In a large bowl, mash the roasted beets with a fork until mostly smooth.
- Add the cooked quinoa, black beans, ground oats, minced garlic, smoked paprika, cumin, salt, and black pepper to the mashed beets. Mix until well combined.
- Form the mixture into two patties, about 1 inch thick.
- Brush both sides of the patties with olive oil.
- Grill the patties for 6-8 minutes on each side or until heated through and slightly charred.
- While the patties are grilling, toast the burger buns on the grill until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the smoked beet patty, a slice of tomato, red onion, and a generous drizzle of BBQ sauce.
- Top with the other half of the bun, serve immediately, and enjoy!
