Ingredients

  • Beets - 2 medium-sized, roasted and peeled
  • Quinoa - 1/2 cup, cooked
  • Black beans - 1/2 cup, drained and rinsed
  • Oats - 1/4 cup, ground
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • BBQ sauce - 1/4 cup (store-bought or homemade)
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves, for serving
  • Tomato - 1 medium, sliced
  • Red onion - 1/4, thinly sliced

Steps

  1. Preheat your grill or stovetop grill pan over medium heat.
  2. In a large bowl, mash the roasted beets with a fork until mostly smooth.
  3. Add the cooked quinoa, black beans, ground oats, minced garlic, smoked paprika, cumin, salt, and black pepper to the mashed beets. Mix until well combined.
  4. Form the mixture into two patties, about 1 inch thick.
  5. Brush both sides of the patties with olive oil.
  6. Grill the patties for 6-8 minutes on each side or until heated through and slightly charred.
  7. While the patties are grilling, toast the burger buns on the grill until golden.
  8. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the smoked beet patty, a slice of tomato, red onion, and a generous drizzle of BBQ sauce.
  9. Top with the other half of the bun, serve immediately, and enjoy!
