Ingredients

  • Baby potatoes - 400 grams
  • Olive oil - 2 tablespoons

  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Wash and scrub the baby potatoes thoroughly, then add them to a pot of salted water.
  3. Bring the water to a boil and cook the potatoes for 15-20 minutes, or until tender when pierced with a fork.
  4. Drain the potatoes and let them cool for a few minutes.
  5. On a baking sheet lined with parchment paper, place the cooked potatoes and gently smash each one with a fork or the bottom of a glass.
