Ingredients

  • Bison ground meat - 250 grams
  • Almond flour - 100 grams
  • Eggs - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Spinach - 50 grams, chopped
  • Basil - 1 tablespoon, fresh, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Chicken or vegetable broth - 250 ml

Steps

  1. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
  2. Add the ground bison to the skillet, cooking until browned and fully cooked, about 6-8 minutes. Stir in chopped spinach, basil, salt, pepper, and nutmeg, cooking for an additional 2 minutes. Remove from heat and let the mixture cool.
  3. In a bowl, combine almond flour and a pinch of salt. Make a well in the center and crack in the egg. Mix until a dough forms, then knead for 2-3 minutes until smooth.
  4. Divide the dough into two equal parts. On a lightly floured surface, roll out each part into thin sheets, about 2 mm thick.
  5. Spoon a small amount of the bison mixture (about 1 tablespoon) onto one sheet of dough, leaving space between each filling. Moisten the edges with water.
  6. Carefully place a second sheet of dough over the filling, pressing down to seal each ravioli. Cut out the ravioli using a cutter or knife.
  7. Bring a pot of salted water to a gentle boil. Cook the ravioli in batches for about 3-4 minutes, or until they float to the surface.
  8. In a separate saucepan, heat the broth and serve it as a light sauce over the cooked ravioli. Garnish with additional fresh basil if desired.
