- Bison ground meat - 250 grams
- Almond flour - 100 grams
- Eggs - 1 large
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Spinach - 50 grams, chopped
- Basil - 1 tablespoon, fresh, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
- Chicken or vegetable broth - 250 ml
Steps
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
- Add the ground bison to the skillet, cooking until browned and fully cooked, about 6-8 minutes. Stir in chopped spinach, basil, salt, pepper, and nutmeg, cooking for an additional 2 minutes. Remove from heat and let the mixture cool.
- In a bowl, combine almond flour and a pinch of salt. Make a well in the center and crack in the egg. Mix until a dough forms, then knead for 2-3 minutes until smooth.
- Divide the dough into two equal parts. On a lightly floured surface, roll out each part into thin sheets, about 2 mm thick.
- Spoon a small amount of the bison mixture (about 1 tablespoon) onto one sheet of dough, leaving space between each filling. Moisten the edges with water.
- Carefully place a second sheet of dough over the filling, pressing down to seal each ravioli. Cut out the ravioli using a cutter or knife.
- Bring a pot of salted water to a gentle boil. Cook the ravioli in batches for about 3-4 minutes, or until they float to the surface.
- In a separate saucepan, heat the broth and serve it as a light sauce over the cooked ravioli. Garnish with additional fresh basil if desired.
