Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Egg - 1 large
  • Almond flour - 100g
  • Mozzarella cheese (dairy-free) - 100g, shredded
  • Ground bison - 250g
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce (no added sugar) - 100g
  • Bell pepper - 1 medium, sliced
  • Red onion - 1/2 medium, sliced
  • Fresh basil leaves - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Break the cauliflower into florets and steam until tender, about 10 minutes.
  3. Once steamed, drain any excess water and pulse the cauliflower in a food processor until it resembles rice.
  4. Transfer the cauliflower to a clean kitchen towel and wring out as much moisture as possible.
  5. In a large bowl, combine the cauliflower, egg, almond flour, 50g of shredded mozzarella, garlic powder, onion powder, oregano, salt, and pepper. Mix until well combined.
  6. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1/2 inch thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  8. While the crust is baking, heat olive oil in a skillet over medium heat. Add the ground bison and cook until browned, about 5-7 minutes. Season with salt and pepper.
  9. Remove the crust from the oven and spread the tomato sauce evenly over the top.
  10. Layer the cooked bison, sliced bell pepper, and red onion on top of the sauce.
  11. Sprinkle the remaining mozzarella cheese over the toppings and return the pizza to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  12. Remove from the oven, garnish with fresh basil leaves, slice, and serve warm.
