- Cauliflower - 1 medium head (about 600g)
- Egg - 1 large
- Almond flour - 100g
- Mozzarella cheese (dairy-free) - 100g, shredded
- Ground bison - 250g
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce (no added sugar) - 100g
- Bell pepper - 1 medium, sliced
- Red onion - 1/2 medium, sliced
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 220°C (425°F).
- Break the cauliflower into florets and steam until tender, about 10 minutes.
- Once steamed, drain any excess water and pulse the cauliflower in a food processor until it resembles rice.
- Transfer the cauliflower to a clean kitchen towel and wring out as much moisture as possible.
- In a large bowl, combine the cauliflower, egg, almond flour, 50g of shredded mozzarella, garlic powder, onion powder, oregano, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add the ground bison and cook until browned, about 5-7 minutes. Season with salt and pepper.
- Remove the crust from the oven and spread the tomato sauce evenly over the top.
- Layer the cooked bison, sliced bell pepper, and red onion on top of the sauce.
- Sprinkle the remaining mozzarella cheese over the toppings and return the pizza to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh basil leaves, slice, and serve warm.
