- Pork belly - 300 grams
- Water - 4 cups (1 liter)
- Tamarind paste - 2 tablespoons
- Tomato - 1 medium, quartered
- Onion - 1 medium, sliced
- Radish (labanos) - 100 grams, sliced
- Eggplant - 1 medium, sliced
- Long green beans (sitaw) - 100 grams, cut into 2-inch pieces
- Spinach or water spinach (kangkong) - 100 grams
- Fish sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, combine the water and pork belly. Bring to a boil over medium heat.
- Skim off any scum that rises to the surface, then add the sliced onion and quartered tomato. Cover and simmer for 20 minutes.
- Stir in the tamarind paste and fish sauce, and season with salt and black pepper to taste.
- Add the sliced radish and eggplant to the pot. Cook for an additional 10 minutes until the vegetables are tender.
- Finally, add the long green beans and spinach, and cook for another 5 minutes until the greens are wilted.
- Taste and adjust seasoning if necessary. Serve hot.
