  • Pork belly - 300 grams
  • Water - 4 cups (1 liter)
  • Tamarind paste - 2 tablespoons
  • Tomato - 1 medium, quartered
  • Onion - 1 medium, sliced
  • Radish (labanos) - 100 grams, sliced
  • Eggplant - 1 medium, sliced
  • Long green beans (sitaw) - 100 grams, cut into 2-inch pieces
  • Spinach or water spinach (kangkong) - 100 grams
  • Fish sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, combine the water and pork belly. Bring to a boil over medium heat.
  2. Skim off any scum that rises to the surface, then add the sliced onion and quartered tomato. Cover and simmer for 20 minutes.
  3. Stir in the tamarind paste and fish sauce, and season with salt and black pepper to taste.
  4. Add the sliced radish and eggplant to the pot. Cook for an additional 10 minutes until the vegetables are tender.
  5. Finally, add the long green beans and spinach, and cook for another 5 minutes until the greens are wilted.
  6. Taste and adjust seasoning if necessary. Serve hot.
