- Fresh tomatoes, chopped - 200 grams
- Garlic, minced - 2 cloves
- Mixed bell peppers, diced - 100 grams
- Red onion, thinly sliced - 50 grams
- Mozzarella cheese, part-skim, shredded - 100 grams
- Fresh basil leaves - 10 grams
- Oregano - 1 teaspoon
- Black pepper - to taste
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, mix whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the mixture on a floured surface for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise for 30 minutes in a warm place.
- Preheat the oven to 220°C (428°F).
- In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add chopped tomatoes and oregano, cooking for 5-7 minutes until the sauce thickens. Season with salt and black pepper.
- Once the dough has risen, punch it down and spread it evenly in a greased baking pan (about 30x20 cm).
- Spread the tomato sauce evenly over the dough, then layer with mixed bell peppers, red onion, and mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes until the crust is golden and the cheese is bubbly.
- Remove from oven, garnish with fresh basil leaves, slice, and serve warm.
