Ingredients

  • Whole wheat flour - 200 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Fresh tomatoes, chopped - 200 grams
  • Garlic, minced - 2 cloves
  • Mixed bell peppers, diced - 100 grams
  • Red onion, thinly sliced - 50 grams
  • Mozzarella cheese, part-skim, shredded - 100 grams
  • Fresh basil leaves - 10 grams
  • Oregano - 1 teaspoon
  • Black pepper - to taste

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, mix whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the mixture on a floured surface for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise for 30 minutes in a warm place.
  4. Preheat the oven to 220°C (428°F).
  5. In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add chopped tomatoes and oregano, cooking for 5-7 minutes until the sauce thickens. Season with salt and black pepper.
  6. Once the dough has risen, punch it down and spread it evenly in a greased baking pan (about 30x20 cm).
  7. Spread the tomato sauce evenly over the dough, then layer with mixed bell peppers, red onion, and mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes until the crust is golden and the cheese is bubbly.
  9. Remove from oven, garnish with fresh basil leaves, slice, and serve warm.
