Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, roasted and sliced
  • Black olives - 50 grams, pitted and sliced
  • Capers - 2 tablespoons, rinsed
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 leaves, torn
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the roasted red pepper, black olives, capers, and cherry tomatoes to the skillet. Sauté for 5-7 minutes, until the tomatoes are softened.
  4. Stir in the cooked pasta, along with a splash of reserved pasta water. Toss everything together until well combined.
  5. Season with red pepper flakes, salt, and black pepper to taste. Cook for an additional 2-3 minutes to heat through.
  6. Remove from heat and stir in the fresh basil before serving.
