- Pasta (spaghetti or penne) - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, roasted and sliced
- Black olives - 50 grams, pitted and sliced
- Capers - 2 tablespoons, rinsed
- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 leaves, torn
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the roasted red pepper, black olives, capers, and cherry tomatoes to the skillet. Sauté for 5-7 minutes, until the tomatoes are softened.
- Stir in the cooked pasta, along with a splash of reserved pasta water. Toss everything together until well combined.
- Season with red pepper flakes, salt, and black pepper to taste. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and stir in the fresh basil before serving.
