  • Green bell pepper - 1/2, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced

  • Vegetable broth - 240 ml
  • Bay leaf - 1
  • Green onions - 2, sliced (for garnish)
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the flour to the skillet and whisk continuously until it turns a deep brown color, about 5-7 minutes, making a roux.

  4. Add the minced garlic and Cajun seasoning, cooking for an additional minute.
  5. Stir in the diced tomatoes and their juice, followed by the vegetable broth and bay leaf.
  6. Bring the mixture to a simmer, and let it cook for about 10 minutes, stirring occasionally.
  7. Add the shrimp to the skillet and cook until they are pink and opaque, about 3-5 minutes.
  8. Remove from heat, discard the bay leaf, and serve over cooked white rice, garnished with sliced green onions and chopped parsley.
