Ingredients

  • Rice noodles - 120 grams
  • Shrimp, peeled and deveined - 200 grams
  • Eggs - 2 large
  • Garlic, minced - 2 cloves
  • Green onions, chopped - 4 stalks
  • Carrots, julienned - 1 medium
  • Red bell pepper, sliced - 1 medium
  • Bean sprouts - 100 grams
  • Peanut butter - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Lime juice - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Cilantro, chopped - 2 tablespoons
  • Crushed peanuts - 2 tablespoons
  • Olive oil - 1 tablespoon

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the shrimp and cook for 3-4 minutes until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add the carrots and bell pepper. Stir-fry for 2-3 minutes until slightly softened.
  5. Push the vegetables to one side of the skillet, crack the eggs into the empty side, and scramble them until fully cooked.
  6. Add the cooked noodles back to the skillet along with the shrimp, bean sprouts, peanut butter, soy sauce, fish sauce, and lime juice. Toss everything together until well combined and heated through, about 2-3 minutes.
  7. Remove from heat, stir in chopped cilantro, and top with crushed peanuts and green onions before serving.
