- lean ground turkey - 250 grams
- onion - 1 medium, diced
- carrots - 1 medium, diced
- peas - 100 grams, frozen
- garlic - 2 cloves, minced
- thyme - 1 teaspoon, dried
- rosemary - 1 teaspoon, dried
- olive oil - 1 tablespoon
- low-sodium chicken broth - 100 ml
- sweet potatoes - 300 grams, peeled and cubed
- milk - 50 ml, low-fat
- salt - to taste
- black pepper - to taste
Steps
- Preheat the oven to 190°C (375°F).
- Boil the sweet potatoes in a pot of salted water for about 15-20 minutes or until tender. Drain and mash with milk, salt, and pepper. Set aside.
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until softened, about 3-4 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spoon and cooking until browned, about 5-7 minutes.
- Stir in the diced carrots, peas, thyme, rosemary, and chicken broth. Cook for another 5-7 minutes until the vegetables are tender and the mixture is slightly thickened. Season with salt and pepper to taste.
- In a baking dish, layer the turkey and vegetable mixture evenly on the bottom. Spread the mashed sweet potatoes over the top, smoothing with a spatula.
- Bake in the preheated oven for 20 minutes, or until the top is slightly golden.
- Remove from the oven, let cool for a few minutes, and serve warm.
