  • Canned diced tomatoes - 400 grams (14 oz)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Bread (for serving) - 2 slices

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5-7 minutes.
  2. Stir in the minced garlic, cumin, paprika, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Add the canned diced tomatoes, salt, and black pepper to the skillet. Stir well and bring the mixture to a simmer. Let it cook for about 10 minutes, stirring occasionally, until slightly thickened.
  4. Make four small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are set to your liking.
  5. Remove from heat and sprinkle crumbled feta cheese and chopped parsley over the top.
  6. Serve hot with slices of bread for dipping.
