- Canned diced tomatoes - 400 grams (14 oz)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 4 large
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Bread (for serving) - 2 slices
Steps
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5-7 minutes.
- Stir in the minced garlic, cumin, paprika, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
- Add the canned diced tomatoes, salt, and black pepper to the skillet. Stir well and bring the mixture to a simmer. Let it cook for about 10 minutes, stirring occasionally, until slightly thickened.
- Make four small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are set to your liking.
- Remove from heat and sprinkle crumbled feta cheese and chopped parsley over the top.
- Serve hot with slices of bread for dipping.
