- Eggs - 4 large
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Puff pastry sheets - 1 (about 250 grams), thawed
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until soft (about 5 minutes).
- Stir in the minced garlic, cumin, and paprika, cooking for another minute until fragrant.
- Add the canned diced tomatoes, salt, and black pepper. Simmer for about 10 minutes, until the sauce thickens slightly.
- While the sauce is simmering, roll out the puff pastry on a lightly floured surface and cut it into circles to fit into a muffin tin.
- Press the pastry circles into the muffin tin cups, ensuring they cover the bottom and sides.
- Once the sauce is ready, spoon it evenly into each puff pastry cup, filling them about halfway.
- Use a small spoon to create a small well in the center of each cup and crack an egg into each well.
- Sprinkle crumbled feta cheese and chopped parsley on top of the eggs.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking and the pastry is golden brown.
- Remove from the oven and let cool slightly before serving.
