Ingredients

  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Red bell pepper - 1/2, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Canned diced tomatoes - 400 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Puff pastry sheets - 1 (about 250 grams), thawed

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until soft (about 5 minutes).
  3. Stir in the minced garlic, cumin, and paprika, cooking for another minute until fragrant.
  4. Add the canned diced tomatoes, salt, and black pepper. Simmer for about 10 minutes, until the sauce thickens slightly.
  5. While the sauce is simmering, roll out the puff pastry on a lightly floured surface and cut it into circles to fit into a muffin tin.
  6. Press the pastry circles into the muffin tin cups, ensuring they cover the bottom and sides.
  7. Once the sauce is ready, spoon it evenly into each puff pastry cup, filling them about halfway.
  8. Use a small spoon to create a small well in the center of each cup and crack an egg into each well.
  9. Sprinkle crumbled feta cheese and chopped parsley on top of the eggs.
  10. Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking and the pastry is golden brown.
  11. Remove from the oven and let cool slightly before serving.
