- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Red bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Canned diced tomatoes - 400 grams
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 4 large
- Cottage cheese - 200 grams
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and red bell pepper; sauté until softened, about 5 minutes.
- Stir in minced garlic, cumin, paprika, salt, and black pepper; cook for another minute.
- Pour in canned diced tomatoes and bring to a simmer; cook for 10 minutes until slightly thickened.
- Make four wells in the tomato mixture and crack an egg into each well.
- Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
- Remove from heat and spoon cottage cheese around the eggs.
- Garnish with fresh parsley before serving.
