Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Red bell pepper - 1, diced
  • Garlic - 3 cloves, minced
  • Canned diced tomatoes - 400 grams
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Cottage cheese - 200 grams
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and red bell pepper; sauté until softened, about 5 minutes.
  3. Stir in minced garlic, cumin, paprika, salt, and black pepper; cook for another minute.
  4. Pour in canned diced tomatoes and bring to a simmer; cook for 10 minutes until slightly thickened.
  5. Make four wells in the tomato mixture and crack an egg into each well.
  6. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  7. Remove from heat and spoon cottage cheese around the eggs.
  8. Garnish with fresh parsley before serving.
