- 200g boneless, skinless chicken breast - 1 piece
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 2 cups mixed salad greens
- 1 cup shredded carrots
- 1/2 cup sliced cucumbers
- 1/4 cup sliced red bell pepper
- 2 tablespoons sesame seeds
- Salt and pepper - to taste
Steps
- Preheat a skillet over medium heat and add sesame oil.
- Season the chicken breast with salt and pepper, then add it to the skillet.
- Cook the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 75°C).
- In a small bowl, whisk together soy sauce, honey, rice vinegar, and grated ginger to create the dressing.
- Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing it into strips.
- In a large bowl, combine the mixed salad greens, shredded carrots, sliced cucumbers, and sliced red bell pepper.
- Add the sliced chicken on top of the salad and drizzle with the prepared dressing.
- Sprinkle sesame seeds over the salad and toss gently to combine.
- Serve immediately, garnished with additional sesame seeds if desired.
