Ingredients

  • 200g boneless, skinless chicken breast - 1 piece
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 2 cups mixed salad greens
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 1/4 cup sliced red bell pepper
  • 2 tablespoons sesame seeds
  • Salt and pepper - to taste

Steps

  1. Preheat a skillet over medium heat and add sesame oil.
  2. Season the chicken breast with salt and pepper, then add it to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 75°C).
  4. In a small bowl, whisk together soy sauce, honey, rice vinegar, and grated ginger to create the dressing.
  5. Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing it into strips.
  6. In a large bowl, combine the mixed salad greens, shredded carrots, sliced cucumbers, and sliced red bell pepper.
  7. Add the sliced chicken on top of the salad and drizzle with the prepared dressing.
  8. Sprinkle sesame seeds over the salad and toss gently to combine.
  9. Serve immediately, garnished with additional sesame seeds if desired.
