  • Black pepper - 1/4 teaspoon (1 g)
  • Cooked chicken (shredded) - 1 cup (150 g)
  • Paleo pizza sauce - 1/2 cup (120 ml)
  • Diced tomatoes - 1/2 cup (75 g)
  • Red onion (thinly sliced) - 1/4 cup (40 g)
  • Bell pepper (diced) - 1/4 cup (40 g)
  • Olives (sliced) - 1/4 cup (30 g)
  • Dairy-free cheese (shredded) - 1/2 cup (60 g)
  • Fresh basil (for garnish) - optional

Steps

  1. In a medium saucepan, bring 2 cups of water to a boil. Stir in the grits, garlic powder, salt, and pepper. Reduce heat to low and cook for about 5-7 minutes, stirring frequently until thickened.
  2. Once the grits are cooked, remove from heat and stir in 1 tablespoon of coconut oil until fully combined.
  3. Preheat your oven to 200°C (400°F).
  4. Spread the cooked grits onto a parchment-lined baking sheet, forming a round pizza shape about 1/2 inch thick.
  5. Bake the grits crust in the preheated oven for about 15 minutes, or until it starts to firm up and lightly golden.
  6. Remove the crust from the oven and spread the paleo pizza sauce evenly over the top.
  7. Layer the shredded chicken, diced tomatoes, red onion, bell pepper, and olives on top of the sauce.
