- Bell pepper (diced) - 1/4 cup (40 g)
- Olives (sliced) - 1/4 cup (30 g)
- Dairy-free cheese (shredded) - 1/2 cup (60 g)

Steps
- In a medium saucepan, bring 2 cups of water to a boil. Stir in the grits, garlic powder, salt, and pepper. Reduce heat to low and cook for about 5-7 minutes, stirring frequently until thickened.
- Once the grits are cooked, remove from heat and stir in 1 tablespoon of coconut oil until fully combined.
- Preheat your oven to 200°C (400°F).
- Spread the cooked grits onto a parchment-lined baking sheet, forming a round pizza shape about 1/2 inch thick.
- Bake the grits crust in the preheated oven for about 15 minutes, or until it starts to firm up and lightly golden.
- Remove the crust from the oven and spread the paleo pizza sauce evenly over the top.
- Layer the shredded chicken, diced tomatoes, red onion, bell pepper, and olives on top of the sauce.
