Ingredients
- Scallops - 300 grams (about 12 large scallops)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Lemon zest - 1 teaspoon
- Butter - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Pat the scallops dry with a paper towel and season both sides with salt and black pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering.
- Add the scallops to the skillet in a single layer without overcrowding. Sear for 2-3 minutes without moving them until a golden crust forms.
- Flip the scallops and cook for another 2-3 minutes until they are opaque and cooked through. Remove scallops from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant.
- Add the lemon juice, lemon zest, and butter to the skillet, stirring to combine. Let the sauce simmer for 1-2 minutes.
- Return the scallops to the skillet, gently coating them in the lemon sauce. Cook for an additional minute to warm through.
- Remove from heat and sprinkle with fresh parsley before serving.
