Ingredients

  • Scallops - 300 grams (about 12 large scallops)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Butter - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Pat the scallops dry with a paper towel and season both sides with salt and black pepper.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering.
  3. Add the scallops to the skillet in a single layer without overcrowding. Sear for 2-3 minutes without moving them until a golden crust forms.
  4. Flip the scallops and cook for another 2-3 minutes until they are opaque and cooked through. Remove scallops from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant.
  6. Add the lemon juice, lemon zest, and butter to the skillet, stirring to combine. Let the sauce simmer for 1-2 minutes.
  7. Return the scallops to the skillet, gently coating them in the lemon sauce. Cook for an additional minute to warm through.
  8. Remove from heat and sprinkle with fresh parsley before serving.
