- Sea scallops - 300 grams
- Fresh spinach - 150 grams
- Butter - 30 grams
- Garlic - 2 cloves, minced
- Lemon - 1, juiced and zested
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the scallops under cold water and pat them dry with paper towels to ensure a good sear.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Season the scallops with salt and black pepper on both sides.
- Carefully place the scallops in the hot skillet, making sure not to overcrowd them. Sear for 2-3 minutes without moving them, until a golden crust forms.
- Flip the scallops and sear the other side for another 2-3 minutes, until cooked through and opaque. Remove from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add butter and minced garlic. Sauté for about 1 minute until fragrant.
- Add fresh spinach to the skillet, stirring until wilted, about 2-3 minutes. Season with salt, black pepper, lemon juice, and lemon zest.
- Plate the sautéed spinach, top with seared scallops, and garnish with chopped parsley.
