Ingredients

  • 2 large bell peppers - any color
  • 200 grams cooked shrimp, chopped
  • 100 grams canned tuna, drained
  • 50 grams cooked quinoa
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh parsley, chopped
  • 1/2 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 50 grams shredded mozzarella cheese (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. In a large bowl, combine the chopped shrimp, canned tuna, cooked quinoa, sautéed onion and garlic, lemon juice, parsley, paprika, salt, and black pepper. Mix well until combined.
  6. Stuff each bell pepper with the seafood mixture, pressing down gently to pack it in.
  7. If using, sprinkle shredded mozzarella cheese on top of each stuffed pepper.
  8. Place the stuffed peppers upright in a baking dish and add a splash of water to the bottom of the dish to help steam the peppers.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  11. Remove from the oven, let cool slightly, and serve warm.
