Ingredients
- 2 large bell peppers - any color
- 200 grams cooked shrimp, chopped
- 100 grams canned tuna, drained
- 50 grams cooked quinoa
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon fresh parsley, chopped
- 1/2 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 50 grams shredded mozzarella cheese (optional)
Steps
- Preheat your oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- In a large bowl, combine the chopped shrimp, canned tuna, cooked quinoa, sautéed onion and garlic, lemon juice, parsley, paprika, salt, and black pepper. Mix well until combined.
- Stuff each bell pepper with the seafood mixture, pressing down gently to pack it in.
- If using, sprinkle shredded mozzarella cheese on top of each stuffed pepper.
- Place the stuffed peppers upright in a baking dish and add a splash of water to the bottom of the dish to help steam the peppers.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, and serve warm.
