Ingredients

  • Shrimp - 150 grams, peeled and deveined
  • Scallops - 150 grams
  • Whole wheat tortillas - 2 pieces
  • Shredded Monterey Jack cheese - 100 grams
  • Fresh spinach - 50 grams
  • Red bell pepper - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Add shrimp and scallops to the skillet, season with salt and black pepper, and cook for about 3-4 minutes until they are opaque and cooked through.
  3. Stir in diced red bell pepper and fresh spinach, cooking for an additional 2 minutes until the spinach wilts.
  4. Remove the skillet from heat and squeeze lime juice over the seafood mixture. Stir in chopped cilantro.
  5. Place a tortilla in a clean skillet over medium heat. Sprinkle half of the shredded cheese on one half of the tortilla.
  6. Add the seafood mixture on top of the cheese, then sprinkle the remaining cheese over the seafood. Fold the tortilla in half.
  7. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  8. Repeat with the second tortilla. Cut the quesadillas into wedges and serve hot.
