  • Chicken broth - 2 cups

  • Onion, chopped - 1 small
  • Red bell pepper, diced - 1
  • Tomato, diced - 1 medium
  • Paprika - 1 teaspoon
  • Saffron threads - 1/4 teaspoon
  • Shrimp, peeled and deveined - 200 grams
  • Mussels, cleaned - 200 grams
  • Calamari rings - 100 grams
  • Frozen peas - 1/2 cup
  • Lemon wedges - 2 for serving
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - for garnish

Steps

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Stir in the diced red bell pepper and tomato, cooking for another 3-4 minutes.
  3. Add the basmati rice, paprika, saffron, salt, and black pepper, stirring to coat the rice with the oil and spices.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and let simmer for about 10 minutes.
  5. After 10 minutes, add the shrimp, mussels, and calamari. Gently mix in the frozen peas.
  6. Cover again and cook for another 5-7 minutes, until the seafood is cooked through and the mussels have opened.
  7. Remove from heat and let it sit covered for an additional 5 minutes.
  8. Serve warm, garnished with chopped parsley and lemon wedges on the side.
