  • Diced tomatoes - 200 grams, canned
  • Okra - 100 grams, sliced
  • Bay leaves - 2
  • Cayenne pepper - 1/2 teaspoon
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped (for garnish)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Gradually whisk in the flour to create a roux, cooking for about 10 minutes until it turns a deep brown color.
  2. Add the diced onion, celery, bell pepper, and garlic to the roux, stirring well for about 5 minutes until the vegetables are softened.
  3. Stir in the sliced Andouille sausage and cook for an additional 3 minutes.
  4. Add the chicken broth, diced tomatoes, okra, bay leaves, cayenne pepper, thyme, salt, and black pepper. Bring to a simmer.
  5. Add the shrimp, mussels, and fish fillet to the pot. Cook for about 10 minutes, or until the seafood is cooked through and the mussels have opened.
  6. Remove the bay leaves before serving. Garnish with chopped green onions and parsley.
