- Green onions - 2, chopped (for garnish)

Steps
- In a large pot, heat the olive oil over medium heat. Gradually whisk in the flour to create a roux, cooking for about 10 minutes until it turns a deep brown color.
- Add the diced onion, celery, bell pepper, and garlic to the roux, stirring well for about 5 minutes until the vegetables are softened.
- Stir in the sliced Andouille sausage and cook for an additional 3 minutes.
- Add the chicken broth, diced tomatoes, okra, bay leaves, cayenne pepper, thyme, salt, and black pepper. Bring to a simmer.
- Add the shrimp, mussels, and fish fillet to the pot. Cook for about 10 minutes, or until the seafood is cooked through and the mussels have opened.
- Remove the bay leaves before serving. Garnish with chopped green onions and parsley.
