- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Potato - 200 grams, peeled and diced
- Fish stock - 500 milliliters
- Heavy cream - 100 milliliters
- Shrimp - 100 grams, peeled and deveined
- Scallops - 100 grams, cleaned
- Cod fillet - 100 grams, cut into bite-sized pieces
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and celery, and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced potatoes and fish stock to the pot. Bring to a boil, then reduce the heat and simmer for 10-12 minutes until the potatoes are tender.
- Stir in the heavy cream and allow the chowder to simmer gently for another 5 minutes.
- Add the shrimp, scallops, and cod to the pot. Cook for an additional 5-7 minutes until the seafood is cooked through and opaque.
- Season the chowder with salt, black pepper, and lemon juice to taste. Stir in the chopped parsley before serving.
