Ingredients

  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Potato - 200 grams, peeled and diced
  • Fish stock - 500 milliliters
  • Heavy cream - 100 milliliters
  • Shrimp - 100 grams, peeled and deveined
  • Scallops - 100 grams, cleaned
  • Cod fillet - 100 grams, cut into bite-sized pieces
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and celery, and sauté until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the diced potatoes and fish stock to the pot. Bring to a boil, then reduce the heat and simmer for 10-12 minutes until the potatoes are tender.
  4. Stir in the heavy cream and allow the chowder to simmer gently for another 5 minutes.
  5. Add the shrimp, scallops, and cod to the pot. Cook for an additional 5-7 minutes until the seafood is cooked through and opaque.
  6. Season the chowder with salt, black pepper, and lemon juice to taste. Stir in the chopped parsley before serving.
