  • Olive Oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Fresh Parsley - 1/2 cup, chopped
  • Fresh Cilantro - 1/4 cup, chopped
  • Garlic - 1 clove, minced
  • Capers - 1 tablespoon, rinsed and chopped
  • Lemon Juice - 2 tablespoons
  • Zest of 1 Lemon - 1 teaspoon
  • Red Pepper Flakes - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Pat the sea bass fillets dry with a paper towel and season both sides with salt and black pepper.
  3. In an ovenproof skillet, heat 2 tablespoons of olive oil over medium-high heat.
  4. Once the oil is hot, place the sea bass fillets skin-side down in the skillet and cook for 3-4 minutes until the skin is crispy.
  5. Carefully flip the fillets over, then transfer the skillet to the preheated oven.
  6. Bake for 8-10 minutes or until the fish is opaque and flakes easily with a fork.
  7. While the fish is baking, prepare the salsa verde by combining the parsley, cilantro, garlic, capers, lemon juice, lemon zest, red pepper flakes, and remaining 1 tablespoon of olive oil in a bowl.
  8. Mix well until all ingredients are combined and set aside.
  9. Once the sea bass is done, remove it from the oven and serve immediately topped with the salsa verde.
