- Sea Bass Fillets - 2 (about 150g each)
- Olive Oil - 3 tablespoons
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Fresh Parsley - 1/2 cup, chopped
- Fresh Cilantro - 1/4 cup, chopped
- Garlic - 1 clove, minced
- Capers - 1 tablespoon, rinsed and chopped
- Lemon Juice - 2 tablespoons
- Zest of 1 Lemon - 1 teaspoon
- Red Pepper Flakes - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Pat the sea bass fillets dry with a paper towel and season both sides with salt and black pepper.
- In an ovenproof skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Once the oil is hot, place the sea bass fillets skin-side down in the skillet and cook for 3-4 minutes until the skin is crispy.
- Carefully flip the fillets over, then transfer the skillet to the preheated oven.
- Bake for 8-10 minutes or until the fish is opaque and flakes easily with a fork.
- While the fish is baking, prepare the salsa verde by combining the parsley, cilantro, garlic, capers, lemon juice, lemon zest, red pepper flakes, and remaining 1 tablespoon of olive oil in a bowl.
- Mix well until all ingredients are combined and set aside.
- Once the sea bass is done, remove it from the oven and serve immediately topped with the salsa verde.
