Ingredients

  • Chicken breast - 2 pieces (150g each)
  • All-purpose flour - 1/2 cup (60g)
  • Egg - 1 large
  • Breadcrumbs - 1 cup (100g)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Large tortillas - 2
  • Lettuce - 1 cup, shredded
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Mayonnaise - 2 tablespoons
  • Dijon mustard - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the flour in a shallow bowl and season with salt, pepper, and paprika.
  3. In a separate bowl, beat the egg.
  4. In a third bowl, place the breadcrumbs.
  5. Pound the chicken breasts to an even thickness and season with salt and pepper.
  6. Dredge each chicken breast in flour, shaking off the excess, then dip in the beaten egg, and finally coat with breadcrumbs.
  7. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  8. Add the breaded chicken breasts and cook for 4-5 minutes on each side, until golden brown and cooked through.
  9. Transfer the cooked schnitzels to a baking sheet and keep warm in the oven while you prepare the wraps.
  10. In a small bowl, mix the mayonnaise and Dijon mustard together.
  11. Lay out the tortillas and spread a tablespoon of the mayo-mustard mixture on each.
  12. Layer the shredded lettuce, sliced tomato, and cucumber on each tortilla.
  13. Place a schnitzel on top of the veggies and wrap the tortilla tightly.
  14. Slice the wraps in half and serve immediately.
