- All-purpose flour - 1/4 cup
- Egg - 1 large
- Breadcrumbs - 1/2 cup
- Olive oil - 2 tablespoons
- Chicken broth - 4 cups
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Prepare the chicken schnitzel: Season the chicken breast with salt, black pepper, and paprika. Dredge it in flour, dip it in the beaten egg, and coat it with breadcrumbs.
- Heat the olive oil in a skillet over medium heat. Fry the schnitzel for about 3-4 minutes on each side until golden and cooked through. Remove from skillet and let it rest.
- In a large pot, add the diced onion, carrot, celery, and minced garlic, and sauté in a little olive oil until softened, about 5 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
- While the soup simmers, slice the cooked schnitzel into strips.
- Add the schnitzel strips to the soup and simmer for an additional 5 minutes.
- Stir in the chopped parsley and lemon juice just before serving.
- Serve hot, garnished with additional parsley if desired.
