  • All-purpose flour - 1/4 cup
  • Egg - 1 large
  • Breadcrumbs - 1/2 cup
  • Olive oil - 2 tablespoons
  • Chicken broth - 4 cups
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Prepare the chicken schnitzel: Season the chicken breast with salt, black pepper, and paprika. Dredge it in flour, dip it in the beaten egg, and coat it with breadcrumbs.
  2. Heat the olive oil in a skillet over medium heat. Fry the schnitzel for about 3-4 minutes on each side until golden and cooked through. Remove from skillet and let it rest.
  3. In a large pot, add the diced onion, carrot, celery, and minced garlic, and sauté in a little olive oil until softened, about 5 minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
  5. While the soup simmers, slice the cooked schnitzel into strips.
  6. Add the schnitzel strips to the soup and simmer for an additional 5 minutes.
