Ingredients

  • Fresh sea scallops - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Pat the scallops dry with paper towels and season both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the scallops to the skillet in a single layer, making sure not to overcrowd the pan.
  4. Sear the scallops for about 2-3 minutes on each side until golden brown and cooked through; they should be opaque in the center.
  5. Remove the scallops from the skillet and set aside on a plate.
  6. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  7. Pour in lemon juice and stir to combine, scraping up any browned bits from the bottom of the skillet.
  8. Add lemon zest and chopped parsley to the skillet, stirring to incorporate.
  9. Return the scallops to the skillet, tossing gently to coat in the lemon sauce.
  10. Serve immediately, garnished with additional parsley if desired.
