Ingredients

  • Scallops - 200 grams
  • Bacon - 4 slices
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat a large skillet over medium heat and add the bacon slices. Cook until crispy, about 5-7 minutes. Remove the bacon and place it on a paper towel to drain.
  2. Leave about 1 tablespoon of bacon fat in the skillet and add the olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Pat the scallops dry with paper towels and season them with salt and black pepper. Place the scallops in the skillet and cook for 2-3 minutes on each side until they are golden brown and opaque.
  4. While the scallops are cooking, crumble the crispy bacon into small pieces.
  5. Once the scallops are cooked, drizzle with lemon juice and toss in the crumbled bacon and chopped parsley. Mix gently to combine.
  6. Serve immediately, garnished with additional parsley if desired.
