Ingredients

  • Arborio rice - 150 grams
  • Fresh scallops - 200 grams
  • Chicken broth (Halal) - 500 ml
  • Dry white wine - 100 ml
  • Shallots - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Butter - 30 grams
  • Parmesan cheese (grated, Halal) - 30 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the chicken broth over low heat and keep it warm.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped shallots and sauté for 2-3 minutes until translucent.
  3. Add the minced garlic and Arborio rice to the skillet, stirring for 1-2 minutes until the rice is lightly toasted.
  4. Pour in the dry white wine and stir until it's mostly absorbed by the rice.
  5. Gradually add the warm chicken broth, one ladle at a time, stirring frequently. Wait until the liquid is absorbed before adding more broth. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  6. While the risotto cooks, season the scallops with salt and pepper. In a separate pan, heat the remaining olive oil and half of the butter over medium-high heat.
  7. Add the scallops to the pan and sear them for about 2-3 minutes on each side until they are golden brown and cooked through. Remove from heat and set aside.
  8. Once the risotto is cooked, stir in the remaining butter, grated Parmesan cheese, and chopped parsley. Season with salt and black pepper to taste.
  9. Serve the risotto in bowls, topped with the seared scallops.
