- Arborio rice - 150 grams
- Fresh scallops - 200 grams
- Chicken broth (Halal) - 500 ml
- Dry white wine - 100 ml
- Shallots - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Butter - 30 grams
- Parmesan cheese (grated, Halal) - 30 grams
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the chicken broth over low heat and keep it warm.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped shallots and sauté for 2-3 minutes until translucent.
- Add the minced garlic and Arborio rice to the skillet, stirring for 1-2 minutes until the rice is lightly toasted.
- Pour in the dry white wine and stir until it's mostly absorbed by the rice.
- Gradually add the warm chicken broth, one ladle at a time, stirring frequently. Wait until the liquid is absorbed before adding more broth. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- While the risotto cooks, season the scallops with salt and pepper. In a separate pan, heat the remaining olive oil and half of the butter over medium-high heat.
- Add the scallops to the pan and sear them for about 2-3 minutes on each side until they are golden brown and cooked through. Remove from heat and set aside.
- Once the risotto is cooked, stir in the remaining butter, grated Parmesan cheese, and chopped parsley. Season with salt and black pepper to taste.
- Serve the risotto in bowls, topped with the seared scallops.
