- Onion - 1 small, diced (about 100g)

- Eggs - 2 large
- Parmesan cheese - 50g, grated
- Mozzarella cheese - 100g, shredded
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Breadcrumbs - 30g (optional for topping)
Steps
- Preheat the oven to 190°C (375°F).
- Slice the zucchini into thin rounds and place them in a colander. Sprinkle with salt and let them sit for 10-15 minutes to draw out excess moisture.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional minute.
- Rinse the salted zucchini under cold water and pat dry with paper towels. Add the zucchini to the skillet and cook for about 5 minutes until just tender. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together the eggs, grated Parmesan cheese, chopped parsley, dried oregano, black pepper, and salt.
- Add the sautéed zucchini mixture to the egg mixture and stir until well combined.
- Pour the mixture into a greased baking dish (approximately 8x8 inches). Top with shredded mozzarella cheese and breadcrumbs if using.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and the center is set.
