Ingredients

  • Zucchini - 2 medium (about 300g)
  • Onion - 1 small, diced (about 100g)
  • Garlic - 2 cloves, minced
  • Eggs - 2 large
  • Parmesan cheese - 50g, grated
  • Mozzarella cheese - 100g, shredded
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Breadcrumbs - 30g (optional for topping)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the zucchini into thin rounds and place them in a colander. Sprinkle with salt and let them sit for 10-15 minutes to draw out excess moisture.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional minute.
  4. Rinse the salted zucchini under cold water and pat dry with paper towels. Add the zucchini to the skillet and cook for about 5 minutes until just tender. Remove from heat and let cool slightly.
  5. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, chopped parsley, dried oregano, black pepper, and salt.
  6. Add the sautéed zucchini mixture to the egg mixture and stir until well combined.
  7. Pour the mixture into a greased baking dish (approximately 8x8 inches). Top with shredded mozzarella cheese and breadcrumbs if using.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden and the center is set.
