- Garlic - 2 cloves, minced

- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the sliced zucchini, red bell pepper, carrot, and red onion. Cook for about 5-7 minutes until vegetables are tender.
- Add fresh spinach, cumin, salt, and black pepper. Cook for another 2-3 minutes until spinach is wilted.
- Remove from heat and stir in lemon juice and feta cheese, if using.
- Warm the whole wheat tortillas in a dry skillet or microwave for a few seconds until pliable.
- Divide the vegetable mixture evenly between the two tortillas, folding them to wrap securely.
