  • Spinach - 50 grams, fresh
  • Red onion - 50 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the sliced zucchini, red bell pepper, carrot, and red onion. Cook for about 5-7 minutes until vegetables are tender.
