- Milk - 2 tablespoons

Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface until it's about 3mm thick, then cut it into two circles (approximately 15cm in diameter).
- Place the pastry circles onto a baking sheet lined with parchment paper, and prick the base with a fork to prevent puffing.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the zucchini, red bell pepper, and grated carrot to the skillet. Sauté for about 5-7 minutes until the vegetables are slightly softened.
- Stir in the chopped spinach and cook for an additional 2 minutes until wilted. Season with salt, pepper, and dried oregano, then remove from heat.
- In a bowl, whisk together the egg and milk. Add the sautéed vegetables and crumbled feta cheese, mixing until combined.
- Spoon the vegetable mixture evenly onto each pastry circle, leaving a small border around the edges.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crispy.
- Remove from the oven, let cool for a few minutes, and serve warm.
