Ingredients

  • Puff pastry - 200 grams
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 50 grams, diced
  • Carrot - 50 grams, grated
  • Spinach - 50 grams, chopped
  • Feta cheese - 75 grams, crumbled
  • Egg - 1 large
  • Milk - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface until it's about 3mm thick, then cut it into two circles (approximately 15cm in diameter).
  3. Place the pastry circles onto a baking sheet lined with parchment paper, and prick the base with a fork to prevent puffing.
  4. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the zucchini, red bell pepper, and grated carrot to the skillet. Sauté for about 5-7 minutes until the vegetables are slightly softened.
  6. Stir in the chopped spinach and cook for an additional 2 minutes until wilted. Season with salt, pepper, and dried oregano, then remove from heat.
  7. In a bowl, whisk together the egg and milk. Add the sautéed vegetables and crumbled feta cheese, mixing until combined.
  8. Spoon the vegetable mixture evenly onto each pastry circle, leaving a small border around the edges.
  9. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crispy.
  10. Remove from the oven, let cool for a few minutes, and serve warm.
