Ingredients

  • All-purpose flour - 125 grams
  • Unsalted butter - 60 grams, cold and cubed
  • Cold water - 30 ml
  • Salt - 1/4 teaspoon
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 50 grams, diced
  • Spinach - 50 grams, chopped
  • Red onion - 30 grams, thinly sliced
  • Egg - 1 large
  • Heavy cream - 60 ml
  • Feta cheese - 50 grams, crumbled
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine flour and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. While the dough chills, heat a skillet over medium heat and sauté red onion for 2-3 minutes until softened.
  5. Add zucchini, red bell pepper, and spinach to the skillet, cooking for an additional 5 minutes until the vegetables are tender. Remove from heat and let cool.
  6. In a separate bowl, whisk together the egg, heavy cream, feta cheese, thyme, parsley, and black pepper.
  7. Roll out the chilled dough on a floured surface to fit a 20 cm (8 inch) tart pan. Press the dough into the pan and trim any excess.
  8. Spread the sautéed vegetables evenly over the crust, then pour the egg mixture on top.
  9. Bake in the preheated oven for 25-30 minutes, or until the tart is set and golden brown on top.
  10. Allow to cool for a few minutes before slicing and serving.
