  • Corn kernels - 100 grams (fresh or frozen)
  • Black beans - 100 grams, rinsed and drained
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Avocado - 1 small, sliced

Steps

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced red onion and sauté for 2-3 minutes until translucent.
  3. Stir in diced zucchini and red bell pepper, cooking for another 5 minutes until softened.
  4. Add corn kernels and black beans to the skillet, followed by cumin, chili powder, salt, and black pepper.
  5. Cook for an additional 5-7 minutes, stirring occasionally until everything is heated through.
  6. Remove from heat and stir in chopped cilantro and lime juice.
  7. Warm corn tortillas in a separate skillet for about 1 minute each side or until pliable.
