- Red bell pepper - 50 g (diced)
- Onion - 30 g (diced)
- Zucchini - 50 g (diced)
- Cheddar cheese - 80 g (shredded)
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried thyme - 1/2 teaspoon
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet, heat olive oil over medium heat. Add onion and red bell pepper, cooking until softened, about 3-4 minutes.
- Add zucchini and spinach to the skillet, cooking until the spinach is wilted and the zucchini is tender, about 3-4 minutes. Season with salt, black pepper, and thyme.
- In a mixing bowl, whisk together the eggs and milk until well combined.
