  • Red bell pepper - 50 g (diced)
  • Onion - 30 g (diced)
  • Zucchini - 50 g (diced)
  • Cheddar cheese - 80 g (shredded)
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried thyme - 1/2 teaspoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat olive oil over medium heat. Add onion and red bell pepper, cooking until softened, about 3-4 minutes.
  3. Add zucchini and spinach to the skillet, cooking until the spinach is wilted and the zucchini is tender, about 3-4 minutes. Season with salt, black pepper, and thyme.
