Ingredients

  • Whole wheat tortillas - 4 pieces
  • Shredded mozzarella cheese - 150 grams
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Red onion - 1 small, thinly sliced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Chili powder - 0.5 teaspoon
  • Salt - 0.5 teaspoon
  • Black pepper - 0.25 teaspoon

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the diced red bell pepper and zucchini, and sauté for 3-4 minutes until they start to soften.
  3. Add the spinach and red onion to the skillet, and continue to sauté for another 2-3 minutes until the spinach wilts.
  4. Sprinkle the ground cumin, chili powder, salt, and black pepper over the vegetables, and stir well to combine. Remove from heat.
  5. In another skillet, heat the remaining tablespoon of olive oil over medium heat.
  6. Place one tortilla in the skillet, and sprinkle half of the shredded mozzarella on one half of the tortilla.
  7. Spoon half of the vegetable mixture over the cheese, then fold the tortilla in half to cover the filling.
  8. Cook for 2-3 minutes on each side, or until the tortilla is golden and the cheese has melted. Repeat with the second tortilla and remaining ingredients.
  9. Cut the quesadillas into wedges and serve warm.
