- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced zucchini and bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
