  • Bell pepper (any color) - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Broccoli florets - 150 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Bring a pot of salted water to a boil and cook the whole wheat noodles according to package instructions, usually about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the julienned carrot, sliced bell pepper, and sliced zucchini to the skillet. Stir-fry for 4-5 minutes until they begin to soften.
  4. Add the broccoli florets to the skillet and continue to stir-fry for another 2-3 minutes until all the vegetables are tender-crisp.
  5. Pour in the soy sauce and sesame oil, mixing well to coat the vegetables. Add the cooked noodles and toss everything together for 2-3 minutes to heat through.
  6. Season with black pepper and stir in the chopped green onions.
