- Bell pepper (any color) - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Broccoli florets - 150 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Bring a pot of salted water to a boil and cook the whole wheat noodles according to package instructions, usually about 8-10 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the julienned carrot, sliced bell pepper, and sliced zucchini to the skillet. Stir-fry for 4-5 minutes until they begin to soften.
- Add the broccoli florets to the skillet and continue to stir-fry for another 2-3 minutes until all the vegetables are tender-crisp.
- Pour in the soy sauce and sesame oil, mixing well to coat the vegetables. Add the cooked noodles and toss everything together for 2-3 minutes to heat through.
