- milk - 1/2 cup
- large egg - 1
- grated zucchini - 1/2 cup
- diced red bell pepper - 1/4 cup
- chopped spinach - 1/4 cup
- grated carrot - 1/4 cup
- feta cheese, crumbled - 1/4 cup
- chopped fresh parsley - 2 tbsp
- black pepper - 1/4 tsp
Steps
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, mix together the whole wheat flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the olive oil, milk, and egg until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the grated zucchini, diced red bell pepper, chopped spinach, grated carrot, feta cheese, chopped parsley, and black pepper.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes or until the muffins are golden and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
