  • whole wheat flour - 1 cup
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • salt - 1/2 tsp
  • olive oil - 2 tbsp
  • milk - 1/2 cup
  • large egg - 1
  • grated zucchini - 1/2 cup
  • diced red bell pepper - 1/4 cup
  • chopped spinach - 1/4 cup
  • grated carrot - 1/4 cup
  • feta cheese, crumbled - 1/4 cup
  • chopped fresh parsley - 2 tbsp
  • black pepper - 1/4 tsp

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the whole wheat flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the olive oil, milk, and egg until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the grated zucchini, diced red bell pepper, chopped spinach, grated carrot, feta cheese, chopped parsley, and black pepper.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes or until the muffins are golden and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
