  • Ice water - 50 ml
  • Salt - 1/2 teaspoon
  • Zucchini - 100 grams, sliced
  • Bell pepper - 100 grams, diced
  • Red onion - 50 grams, sliced
  • Mushrooms - 100 grams, sliced
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Fresh basil - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water until the dough comes together. Form it into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 200°C (400°F).
  4. In a skillet, heat the olive oil over medium heat. Add the garlic, onion, zucchini, bell pepper, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender. Stir in thyme, basil, and season with black pepper.
