Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 30 ml
- Salt - 5 grams
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Bell pepper (red or yellow) - 50 grams, diced
- Zucchini - 50 grams, thinly sliced
- Fresh rosemary - 1 tablespoon, chopped
- Black pepper - to taste
Steps
- In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix together until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes, or until doubled in size.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and transfer it to a baking sheet lined with parchment paper. Stretch and flatten the dough to fit the baking sheet.
- Arrange the halved cherry tomatoes, sliced red onion, diced bell pepper, and zucchini on top of the dough. Press them gently into the surface.
- Sprinkle chopped rosemary and black pepper over the top. Drizzle with a little more olive oil if desired.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through.
- Remove from the oven, let cool slightly, slice, and serve warm.
