Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Bell pepper (red or yellow) - 50 grams, diced
  • Zucchini - 50 grams, thinly sliced
  • Fresh rosemary - 1 tablespoon, chopped
  • Black pepper - to taste

Steps

  1. In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix together until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes, or until doubled in size.
  5. Preheat your oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and transfer it to a baking sheet lined with parchment paper. Stretch and flatten the dough to fit the baking sheet.
  7. Arrange the halved cherry tomatoes, sliced red onion, diced bell pepper, and zucchini on top of the dough. Press them gently into the surface.
  8. Sprinkle chopped rosemary and black pepper over the top. Drizzle with a little more olive oil if desired.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through.
  10. Remove from the oven, let cool slightly, slice, and serve warm.
