- Corn tortillas - 4 pieces
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Spinach - 50 grams, chopped
- Onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Enchilada sauce - 200 grams
- Shredded cheese (cheddar or Mexican blend) - 100 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the onions and garlic until translucent, about 3-4 minutes.
- Add the diced zucchini and red bell pepper to the skillet and cook for another 5 minutes until slightly softened.
- Stir in the chopped spinach, cumin, chili powder, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach is wilted.
- Remove the skillet from heat and let the vegetable mixture cool slightly.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Take a corn tortilla, fill it with a generous amount of the vegetable mixture, and roll it up tightly. Place seam side down in the baking dish.
- Repeat for the remaining tortillas and vegetable filling.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes before serving.
