Ingredients

  • Corn tortillas - 4 pieces
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Spinach - 50 grams, chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Enchilada sauce - 200 grams
  • Shredded cheese (cheddar or Mexican blend) - 100 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the onions and garlic until translucent, about 3-4 minutes.
  3. Add the diced zucchini and red bell pepper to the skillet and cook for another 5 minutes until slightly softened.
  4. Stir in the chopped spinach, cumin, chili powder, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach is wilted.
  5. Remove the skillet from heat and let the vegetable mixture cool slightly.
  6. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  7. Take a corn tortilla, fill it with a generous amount of the vegetable mixture, and roll it up tightly. Place seam side down in the baking dish.
  8. Repeat for the remaining tortillas and vegetable filling.
  9. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  10. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
  11. Remove from the oven and let cool for a few minutes before serving.
