- dried oregano - 1 teaspoon
- dried thyme - 1 teaspoon

- black pepper - 1/4 teaspoon
- parmesan cheese - 30 grams, grated
- panko breadcrumbs - 30 grams
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the diced zucchini, bell pepper, and grated carrot to the skillet. Cook for another 5-7 minutes until the vegetables start to soften.
- Stir in the chopped spinach, vegetable broth, oregano, thyme, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach wilts.
- Transfer the vegetable mixture to a small casserole dish.
