  • zucchini - 1 medium, diced

  • garlic - 2 cloves, minced

  • vegetable broth - 120 ml
  • dried oregano - 1 teaspoon
  • dried thyme - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • parmesan cheese - 30 grams, grated
  • panko breadcrumbs - 30 grams

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
  3. Add the diced zucchini, bell pepper, and grated carrot to the skillet. Cook for another 5-7 minutes until the vegetables start to soften.
  4. Stir in the chopped spinach, vegetable broth, oregano, thyme, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach wilts.
