  • Black beans - 1 cup, rinsed and drained
  • Corn - 1/2 cup, frozen or fresh
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1, sliced
  • Sour cream - 1/4 cup (optional)
  • Lime - 1, cut into wedges (for serving)

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 2-3 minutes until translucent.
  2. Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.
  3. Stir in the black beans, corn, cumin, chili powder, salt, and black pepper. Cook for another 3-4 minutes until heated through.
  4. Remove the skillet from heat and stir in the chopped cilantro.
  5. Warm the flour tortillas in a separate pan or microwave for a few seconds until pliable.
  6. To assemble the burritos, place a generous scoop of the vegetable mixture in the center of each tortilla. Add a few slices of avocado on top.
  7. Fold the sides of the tortilla over the filling and roll it up tightly from the bottom to the top.
  8. Serve the burritos with a dollop of sour cream and lime wedges on the side.
