- Black beans - 1 cup, rinsed and drained
- Corn - 1/2 cup, frozen or fresh
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1, sliced
- Sour cream - 1/4 cup (optional)
- Lime - 1, cut into wedges (for serving)
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.
- Stir in the black beans, corn, cumin, chili powder, salt, and black pepper. Cook for another 3-4 minutes until heated through.
- Remove the skillet from heat and stir in the chopped cilantro.
- Warm the flour tortillas in a separate pan or microwave for a few seconds until pliable.
- To assemble the burritos, place a generous scoop of the vegetable mixture in the center of each tortilla. Add a few slices of avocado on top.
- Fold the sides of the tortilla over the filling and roll it up tightly from the bottom to the top.
- Serve the burritos with a dollop of sour cream and lime wedges on the side.
