- Dried thyme - 1 teaspoon

Steps
- Preheat the oven to 190°C (375°F).
- In a medium saucepan, combine the brown rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 40 minutes, or until rice is tender and liquid is absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and carrot, and sauté for about 5 minutes until softened.
- Add the zucchini, red bell pepper, and minced garlic to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.

- Once the rice is cooked, add it to the skillet with the vegetables, and mix until well combined.
- Transfer the mixture to a greased 9x9 inch (23x23 cm) baking dish. If using, sprinkle the grated Parmesan cheese evenly on top.
