Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Zucchini - 1 medium, diced
  • Bell pepper (any color) - 1 medium, diced
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Spinach - 2 cups, fresh
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
  3. While the quinoa is cooking, prepare the vegetables. In a large mixing bowl, combine diced zucchini, bell pepper, cherry tomatoes, red onion, and minced garlic.
  4. Drizzle the vegetables with 2 tablespoons of olive oil, cumin, paprika, salt, and black pepper. Toss to coat evenly.
  5. Spread the vegetables on a baking sheet and roast in the preheated oven for 15-20 minutes, until tender and slightly caramelized.
  6. Once the quinoa is cooked, fluff it with a fork and stir in the fresh spinach until wilted.
  7. Remove the roasted vegetables from the oven and combine them with the quinoa and spinach in a large bowl.
  8. Drizzle with lemon juice and sprinkle with fresh parsley before serving.
