- Water - 2 cups

- Zucchini - 1 medium, diced
- Bell pepper (any color) - 1 medium, diced
- Cherry tomatoes - 1 cup, halved
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Spinach - 2 cups, fresh
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
- While the quinoa is cooking, prepare the vegetables. In a large mixing bowl, combine diced zucchini, bell pepper, cherry tomatoes, red onion, and minced garlic.
- Drizzle the vegetables with 2 tablespoons of olive oil, cumin, paprika, salt, and black pepper. Toss to coat evenly.
- Spread the vegetables on a baking sheet and roast in the preheated oven for 15-20 minutes, until tender and slightly caramelized.
- Once the quinoa is cooked, fluff it with a fork and stir in the fresh spinach until wilted.
- Remove the roasted vegetables from the oven and combine them with the quinoa and spinach in a large bowl.
- Drizzle with lemon juice and sprinkle with fresh parsley before serving.
