- Green or brown lentils - 100 grams
- Quinoa - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Dried thyme - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Rinse the lentils and quinoa under cold water; set aside.
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic, diced carrot, celery, red bell pepper, and zucchini to the pot. Sauté for another 5-7 minutes until the vegetables begin to soften.
- Stir in the rinsed lentils, quinoa, vegetable broth, dried thyme, dried oregano, bay leaf, salt, and black pepper.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 25-30 minutes, or until lentils and quinoa are tender.
- Remove the bay leaf, taste, and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
