- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Dried thyme - 1 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery, and cook for another 5 minutes, stirring occasionally.
- Stir in the diced red bell pepper and zucchini, cooking for an additional 3-4 minutes.
- Add the rinsed lentils, vegetable broth, dried thyme, ground cumin, salt, black pepper, and bay leaf into the pot. Bring to a boil.
- Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 25-30 minutes, or until the lentils are tender.
- Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
