Ingredients

  • Green lentils - 100 grams
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic, diced carrot, and diced celery, and cook for another 5 minutes, stirring occasionally.
  4. Stir in the diced red bell pepper and zucchini, cooking for an additional 3-4 minutes.
  5. Add the rinsed lentils, vegetable broth, dried thyme, ground cumin, salt, black pepper, and bay leaf into the pot. Bring to a boil.
  6. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 25-30 minutes, or until the lentils are tender.
  7. Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
