  • Diced tomatoes - 400 grams (1 can)
  • Vegetable broth - 500 milliliters
  • Brown lentils - 100 grams, rinsed
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 50 grams, fresh

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrot, and celery to the pot, cooking for about 5 minutes until softened.
  3. Stir in the minced garlic, green bell pepper, and zucchini, and cook for another 3-4 minutes.
