- Brown lentils - 100 grams, rinsed
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 50 grams, fresh
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery to the pot, cooking for about 5 minutes until softened.
- Stir in the minced garlic, green bell pepper, and zucchini, and cook for another 3-4 minutes.
